Easy Chicken Shawarma and Yogurt Sauce Ingredients

  • 3 lbs boneless skinless chicken thighs


  • ¼ cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic minced
  • 1 tablespoon coriander
  • 1 tablespoon ground cumin
  • 2 teaspoons smoked paprika
  • 1 teaspoon allspice
  • 1 teaspoon ground cloves
  • 1 teaspoon chili powder
  • 1 teaspoon turmeric
  • 1 teaspoon onion powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon black pepper

Yogurt Sauce

  • 1 cup plain Greek yogurt
  • 1 clove finely minced garlic (or substitute jarred minced garlic)
  • 1 teaspoon ground cumin
  • 2 tablespoons tahini
  • juice of 1/4 lemon
  • salt and pepper to taste

For Serving

  • 4-6 pita bread, naan bread, or other soft flatbread
  • diced tomatoes
  • diced cucumbers
  • thinly sliced red onion
  • shredded lettuce
  • dill pickles

Easy Chicken Shawarma and Yogurt Sauce Directions

  1. Make the chicken shawarma marinade. Combine all marinade ingredients in a large bowl and mix well. Add the boneless skinless chicken thighs to the bowl and mix well so that all chicken pieces are evenly coated. Cover and refrigerate for 6-24 hours.
  2. Make the yogurt sauce. Combine all yogurt sauce ingredients in a small bowl and mix well. Cover and refrigerate until ready to serve. *The yogurt sauce will stay good in the fridge for up to 3 days.
  3. Heat the griddle to about 450 degrees F when the chicken is done marinating.
  4. Place the chicken thighs on the heated griddle surface, ensuring they are spread out and flat. Cook on the first side for about 5-6 minutes, or until a nice char develops. Then, flip to the second side and continue to cook for an additional 4-5 minutes, or until the internal temperature reaches 165 degrees F.
  5. When the chicken is fully cooked, transfer it to a cutting board to rest for 5-6 minutes. Then, slice it against the grain into thin strips.
  6. Make the chicken shawarma wraps. Spread some yogurt sauce on the naan or pita bread. Top with sliced chicken, lettuce, tomato, red onion, cucumbers, and pickles. Wrap up and serve with extra sauce for dipping.
