As ripe avocados meet the flame, their flesh softens and deepens in flavor, taking on delicate char marks that add warmth and complexity. Sliced red onion and jalapeño blister gently nearby, releasing aroma and subtle heat. Each ingredient gains character over the fire—smoky, bright, and layered.
The grilled avocado is mashed just enough to retain texture, then folded with fresh lime, chopped tomato, and cilantro for balance. Toasted artisan sourdough follows, brushed lightly with oil and set over direct heat until crisp at the edges with defined grill lines across the surface. Grilled Avocado Toast Ingredients
- 2 Ripe Avocados, halved and pitted
- 1 Roma Tomato, chopped and seeds removed
- ¼ Red Onion, thinly sliced
- 1 Jalapeño, deseeded and halved
- 2 Tbs Fresh Cilantro, finely chopped
- ½ Lime, juiced
- Salt and Freshly Ground Black Pepper, to taste
- Big Swede BBQ Badass Veggie Boost, or your favorite herb seasoning
- Feta Cheese, crumbled
- Herbed Pork Rinds
- Artisan Sourdough Bread, sliced
- Duck Fat Spray or Extra Virgin Olive Oil
Grilled Avocado Toast Directions
- Pre-heat your Summerset grill by igniting all main burners. Then close the hood and allow the grill to heat for 10 to 15 minutes; the hood thermometer should reach approximately 650°. Turn off all the knobs except one.
- Place the avocados cut-side down on the grill over direct heat. Add the jalapeño halves and onion slices to the grill as well. Grill for 3–5 minutes until lightly charred and the avocados develop grill marks.
- Remove from the grill. Finely chop the grilled onion and jalapeño. Place them in a molcajete or bowl with a pinch of salt and pepper and mash gently to release the oils.
- Scoop the grilled avocado flesh into the bowl and mash carefully, keeping some texture. Add the chopped tomato, lime juice, and cilantro. Stir gently and set aside.
- Lightly spray both sides of the sourdough slices with duck fat spray or brush with olive oil. Place the bread on the grill over direct heat and grill on both sides until grill marks are defined and the bread develops light char.
- Remove the bread from the grill. Spoon a generous portion of grilled guacamole onto each slice.
- Season lightly with Big Swede BBQ Badass Veggie Boost. Crumble feta cheese over the top and finish with crushed herbed pork rinds for texture.
- Serve immediately.
