Lobster Tacos Ingredients

  • 3 Lobster Tails
  • 1 1/2 sticks of Butter
  • 5 Tbs Garlic, minced
  • 3 Tbs Big Swede BBQ Badass Veggie Boost or your favorite herb rub
  • 2 Avocados, cubed
  • 2 cups Cole Slaw
  • 1 cup Pico de Gallo
  • 1 cup Lime Cilantro Crema
  • Cilantro leaves, for garnish
  • 1 Lime, juiced
  • Flour Tortillas

Lobster Tacos Directions

  1. Preheat your Summerset grill by igniting all main burners. Then close the hood and allow the grill to heat for 10 to 15 minutes; the hood thermometer should reach approximately 450°F. Turn off all the knobs except one.
  2. Melt the butter over high heat in a small pan and add the garlic. Then add the Big Swede BBQ Badass Veggie Boost or your favorite herb seasoning.
  3. Cut the lobster tails in half, brush with the butter mix, and place the meat side down on the grill. Grill for 3-4 minutes. Flip over and continue grilling until the lobster meat reaches an internal temperature of 130°F. Baste several times with the butter mix. Remove the lobster tails from the grill, and when cool, cut into smaller chunks.
  4. Heat the tortillas on the grill, and then build the tacos. Start by placing the coleslaw and the cubed avocado on the tortillas. Then add plenty of the chopped lobster meat. Sprinkle Pico de Gallo on top of the lobster meat.
  5. Drizzle with the crema and garnish with the cilantro.
  6. Finally, squeeze some lime juice on top and serve the tacos immediately.
