Makes 12 oysters

Grilled Oysters Ingredients

  • 12 Large Oysters
  • 8 Tbs Butter
  • 1 Tbs Big Swede BBQ Badass Veggie Boost or your favorite herb rub
  • 1/4 cup Basil Leaves
  • 1/2 cup Parmesan Cheese, grated
  • 1 Tbs Lemon Juice
  • 1/2 Lemon, zested
  • 2 Garlic Cloves, minced

Grilled Oysters Directions

  1. Preheat your Summerset grill by igniting all main burners. Then, close the hood and let the grill heat for 10 to 15 minutes; the hood thermometer should reach approximately 450°F. Turn the knobs to LOW.
  2. Let the butter sit at room temperature until it softens. Add the rub, basil, parmesan cheese, lemon juice, zest, and garlic to the butter. Mix thoroughly and set aside.
  3. Line a rimmed baking sheet with heavy-duty aluminum foil, crinkling it to create deep creases. Shuck the oysters, discard the top shells, and place them on the foil-lined baking sheet. The foil will keep them upright, preventing oyster juices from spilling out.
  4. Using two spoons, place a tablespoon of compound butter on top of each oyster and place the baking sheet in the Summerset grill. Close the lid and cook until the butter is melted and the liquid is bubbling, about 3 minutes. When ready, remove it from the grill.
  5. Pour some coarse sea salt into a serving tray and place the oyster on top of the salt. This will help keep the oysters upright and straight when serving, preventing the liquid inside from spilling.
  6. Serve immediately.
