Grilled Lamb Chops take center stage in this bold yet refined recipe from Summerset Brand Ambassador Johan Magnusson of Big Swede BBQ. A perfect match for the robust performance of Summerset’s gas grill collection—including the Quest, TRL Pro, Sizzler Pro, and Sizzler Series—this recipe makes full use of high, consistent heat and superior airflow control to sear flavor into every bite. Whether you’re entertaining a crowd or treating yourself to a solo backyard indulgence, these chops offer a sensory experience worth savoring.
Each rack is trimmed, sliced, and generously seasoned with Big Swede BBQ’s award-winning Badass Beef Boost, resulting in a deep, peppery bark with just the right bite. After a quick rest at room temperature, the chops meet the flame—grilled hot and fast to render the fat, build a beautiful crust, and lock in moisture. Aromatic herbs, soaked and added to your smoker box, infuse the meat with a fragrant hint of rosemary and thyme, while a final splash of grilled lemon brightens the richness with a clean finish.
This is luxury outdoor grilling at its most flavorful—simple in execution yet elevated in experience. It’s the kind of dish that turns heads at the table and builds your confidence at the grill.

Serves 6-8
Grilled Lamb Chops Ingredients
- 2 racks of Lamb Rib Loin
- Big Swede BBQ Badass Beef Boost or your favorite steak rub
- 1 Lemon
- Mixed fresh herbs (thyme, rosemary, oregano)
Grilled Lamb Chops Directions
- Pre-heat your Summerset grill by igniting all main burners. Then, close the hood and allow the grill to heat for 10 to 15 minutes; the hood thermometer should reach approximately 450°F. Turn off all the knobs except one.
- Trim the extra fat from the lamb racks, then slice each rack into individual chops. Season each lamb chop with the Big Swede BBQ Badass Beef Boost or your favorite steak rub, and let it sit at room temperature for 60 minutes to allow the rub to adhere to the lamb.
- Add some herbs soaked in water to the Smoker Box and place over the hot grates.
- Place the lamb chops on the grill and grill for 3-4 minutes. Then flip over and continue grill until cooked through, with an inner temperature of 130°. Lamb chops are fatty cuts, so move them around on the grill to avoid flare-ups that might char the meat and make it taste bitter.
- When almost ready, slice the lemon in half and squeeze some lemon juice on top of the chops. Remove from the grill. Let the grilled lamb chops rest for 5 minutes, then serve immediately.
