Sweet and Spicy Chicken Bacon Lollipops – Super Bowl Grilling Series
The New Year brings self-examination of how much one grew last year, self-determination to do better this year, and self-gratification because it’s playoff time baby; the Super Bowl is coming! Over the next few weeks, as the participants are decided, we will be providing terrific menu ideas for the big game in our Super Bowl Grilling Series. First up are Sweet and Spicy Chicken Bacon Lollipops, featuring the Hail Mary trifecta of sweet, spicy, and BACON. These are sure to be a favorite, so be prepared to make multiple batches.
Begin by preparing the sweet pepper sauce for dipping, which is a mixture of bell pepper, sugar, vinegar, butter, and Hot Pepper Blackened Seasoning, simmered and reduced. The lollipops are made by laying down a slice of bacon on a cutting board, adding a strip of chicken on top, and rolling into a pinwheel shape and threading on a skewer. Once assembled the, the skewers are season with Hot Pepper Blackened Seasoning, and grilled for 6-8 minutes preside. Serve with the sweet pepper sauce for a flavor explosion fit for any touchdown celebration. Sweet and Spicy Chicken Bacon Lollipops Ingredients
- 2 medium boneless skinless chicken breasts
- 9 slices center cut bacon
- 1 Tablespoon McCormick Grill Mates Hot Pepper Blackened Seasoning
- Sweet Pepper Sauce
- 1 large bell pepper stem and seeds removed
- 1 1/2 cups white sugar
- 1/4 cup apple cider vinegar
- 1 Tablespoon salted butter
- 1 Tablespoon McCormick Grill Mates Hot Pepper Blackened Seasoning
Sweet and Spicy Chicken Bacon Lollipops Directions
- In a blender, pulse the bell pepper, sugar, vinegar, butter, and Hot Pepper Blackened Seasoning together until the peppers are chopped into small pieces. Transfer to a small sauce pan and bring to a boil. Reduce the heat to low and simmer with the lid off for 15 minutes. While the sauce is simmering, prepare your lollipops.
- Preheat your grill to medium high (about 375-400 degrees).
- Slice your chicken breasts lengthwise into 1 inch thick strips. Lay a piece of bacon on your cutting board and top with a strip of the chicken. Roll into a pinwheel and slide onto a bamboo skewer. Repeat with the remaining chicken and bacon strips.
- Season both sides of the lollipops with the Hot Pepper Blackened Seasoning.
- Place the chicken bacon lollipops on the grill and cook for 6-8 minutes per side, or until the internal temperature reads 165 degrees with an instant read thermometer.
- Transfer the finished lollipops to a large plate and serve the sweet pepper sauce on the side for dipping (or pouring).
