Giant Fair-Style Turkey Legs Ingredients


  • 1/2 cup table salt
  • 1/2 cup brown sugar
  • 2 tbsp onion powder
  • 2 tbsp garlic powder
  • 2 tbsp red pepper flakes
  • 2 tbsp poultry seasoning
  • 1 tbsp Tabasco
  • 2 bay leaves
  • 3/4-1 gallon water
  • 6 large turkey legs


  • 2 tbsp chili powder
  • 2 tsp steak seasoning
  • 2 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • olive oil

Giant Fair-Style Turkey Legs Directions

  1. Mix all the brine ingredients in a large container with a lid and add turkey legs. Let sit in the brine for 12-24 hours, stirring occasionally.
  2. Prepare a grill for indirect cooking at about 325F.
