Cuban Mojo Grilled Pork Chops – Sizzling Summer Series

With the last few weeks of summer upon us, the mad scramble to salvage any vacation plans, getaways, or pool parties can add a lot of stress to an already stressful time.  The Sizzling Summer Series continues with simple meal ideas to keep the spirit of summer alive, whether you can get out of town or not. For a unique Caribbean feel, Cuban Mojo Grilled Pork Chops is a heavenly combo of garlic, citrus, and onions to take you away to sunbathing on a secluded beach. You may not be able to get away, but here’s to experiencing the flavors of island paradises.

Begin with a marinade of garlic, onions, sour orange juice, oregano, cumin, salt, and black peppercorns. Put half of this puree in a sealable bag with the pork chops to marinate overnight, and save the other half to make a sauce. When ready to grill, prepare the sauce first by heating oil in a saucepan, sauté onions, adding the reserved marinade, bringing it to a simmer, and then removing it from heat. Grill the pork chops over medium-high heat until golden brown, and allow to rest.  Serve the pork chops covered in mojo sauce with black beans and rice for an exotic summery Cuban experience in your own backyard.

Cuban Mojo Grilled Pork Chops Ingredients

  • 10 cloves garlic
  • 1 large onion, sliced
  • 1 1/2 cups sour orange juice (1 cup orange juice + 1/2 cup lime juice)
  • 1 teaspoon oregano
  • 1 teaspoon cumin, toasted and ground
  • 2 teaspoons salt
  • 1 teaspoon black peppercorns
  • 1 pound pork chops
  • 1 teaspoon oil
  • 1 large onion, sliced

Cuban Mojo Grilled Pork Chops Directions

  1. Puree the garlic, onion, sour orange juice, oregano, cumin, salt, and pepper in a food processor or blender. Place 1/2 of the mixture into a large sealable bag with the pork chops and marinate in the fridge overnight.
  2. Heat the grill or a grill pan to medium-high heat, add the pork chops and cook until lightly golden brown on one side, about 3-5 minutes, flip them and cook until the pork chops are done about 3 minutes.
  3. Meanwhile, heat the oil in a pan over medium heat, add the onions, cook until just tender, about 5 minutes, add the remaining mojo sauce, and bring it to a simmer and remove from heat.
  4. Serve the grilled pork chops covered in the mojo and onion sauce and enjoy!
