Grilled Lobster Rolls arrive just as the championship narrows, and every game calls for something bold in hand while the other raises fanatically toward the screen. With Grillsanity in full stride, this is the kind of dish that keeps everyone close—one eye on the action, the other on what’s coming off the grill.
Lobster hits the grates over high heat, picking up a light char that deepens its natural sweetness. A quick coating helps it sear cleanly, while a savory blend builds flavor without taking over. Once finished, the meat is chopped into generous pieces and folded with lemon, fresh herbs, and a smooth, balanced base that keeps each bite both bright and rich.
Meanwhile, brioche rolls toast until golden, edges crisp and centers soft. Buttered and warmed just enough, they hold everything together without competing for attention. Each roll comes together quickly, making it easy to serve a crowd without slowing down the moment.
As the field narrows and the energy builds, this is food that keeps pace—easy to share, satisfying to eat, and right at home outdoors with friends gathered close.

- Pre-heat your Summerset grill by igniting all main burners. Then close the hood and allow the grill to heat for 10 to 15 minutes; the hood thermometer should reach approximately 550°. Turn off all the knobs except one.
- Cut the lobster tails in half lengthwise. Lightly spray the meat side with duck fat spray and season with Veggie Boost.
- Place the lobster tails meat-side down over direct heat. Grill for 2 minutes, then flip and grill for another 90 seconds until just cooked through. Remove from the grill and allow to cool slightly.
- Remove the lobster meat from the shells and chop it into large chunks.
- In a bowl, combine mayonnaise, lemon juice, dill, and a pinch of sea salt. Fold in the lobster meat gently.
- Brush the brioche rolls with melted butter, then grill them lightly over direct heat until toasted.
- Fill each roll generously with the lobster mixture and serve immediately.
