Some game-day foods require a plate and a seat. Grilled Buffalo Chicken Wings are made for grabbing by the fistful, waving through a big play, and polishing off before the next snap. Hot from the grill and slicked with Buffalo sauce, these wings belong at the center of a Saturday or Sunday spent in front of the screen.

Few foods pair with football quite like Buffalo wings. This grilled rendition captures everything you crave from the classic, pairing crisp skin with juicy chicken and a glossy coating of buttery hot sauce. Cooking them over the flame adds another layer of character, giving each bite a lightly charred edge and savory depth that fried versions simply cannot match.

That contrast makes these wings hard to resist. The exterior delivers a satisfying crunch before giving way to tender meat, while the sauce coats every drumette and flat with tangy heat and rich flavor. Serve them piping hot with cool ranch or blue cheese for dipping, then add crisp celery alongside to complete a game-day favorite.

Wings also fit naturally into the rhythm of watching football. No formal seating is required, and nobody has to miss much of the action. Set out a generous platter, gather everyone around the screen, and keep plenty of napkins within reach.

As part of Summerset’s Game Day Grilling Series, this recipe takes a stadium favorite outside and gives it the flame-kissed character of the backyard grill. Fire up your Summerset Grill, pour something cold, and settle in for an afternoon of bold Buffalo heat, roaring flames, and good company. When the whistle blows, reach for another wing and savor every play and bite.

Makes 12 wings

Grilled Buffalo Chicken Wings Ingredients

  • 1 pound chicken wings (about 12 wings)
  • 1 tablespoon beef rub
  • 1 tablespoon cornstarch
  • 1 cup Frank’s Red Hot
  • 1 tablespoon unsalted butter
  • ½ cup ranch or blue cheese for dipping sauce

Beef Rub

  • 1 cup kosher salt
  • 1 cup coarse black pepper
  • 1 cup granulated garlic (not garlic powder)
  • Funnel
  • Mason Jar for Storage

Grilled Buffalo Chicken Wings Directions

  1. Prepare Grill: Set up a two-zone grill and heat the cooking chamber to 400 degrees Fahrenheit.
  2. Season Wings: In a small bowl, combine seasoning and cornstarch. Place the wings in the plastic baggie, then pour in the seasoning mixture. Seal the bag and shake to coat the wings.
  3. Grill Indirect: Place the seasoned wings on the indirect side of the grill. Cover the grill and grill the wings for 15 minutes. Then flip the wings and grill an additional 15 minutes.
  4. Make Sauce: While the wings grill, add the hot sauce and butter to a small pan over medium heat. Stir to combine as the butter melts. Turn the heat down if it starts to simmer; it just needs to melt the butter and combine with the sauce.
  5. Finish: Place the wings in a large bowl and pour the warm sauce over the wings. Toss to combine, then plate and serve with your favorite dipping sauce.

Beef Rub

  1. In a large bowl, combine all ingredients and stir to combine.
  2. Using a funnel, put the dry rub in a large mason jar and seal with a lid. Will last six months in a cool, dry place.
